La cartouche de bouillon de sérum à l’orange (OSB) détecte la contamination par des micro-organismes aciduriques dans les produits alimentaires à forte teneur en acide. Lorsque le dioxyde de carbone (CO₂) est libéré par la croissance des levures et des moisissures, le CO₂ produit se diffuse à travers une couche de membrane dans un bouchon de gélose contenant un indicateur de colorant. Le changement de couleur du colorant est lu par l’instrument Soleris®. La couche de membrane sert également de barrière, éliminant l’interférence du produit avec le cadre de lecture.
