Environmental monitoring can help food manufacturers take a proactive approach to controlling microbial spoilage within their cleaning and sanitization processes. Common sources of spoilage microorganisms are improperly cleaned and sanitized food contact surfaces and equipment within a facility. This approach is particularly useful in quality management systems, as spoilage incidents often arise sporadically and without consistent baseline measurements, which can cause underlying or chronic issues to go unnoticed. Applying root cause analysis to identify chronic areas of spoilage contamination, combined with environmental seek and destroy principles, can help to reduce microbial spoilage of the finished product.

About the Speaker
Dr. Randy Worobo – Professor of Food Microbiology and Food Safety, Cornell University
Dr. Randy Worobo is a Professor of Food Microbiology and Food Safety at Cornell University, Department of Food Science. Dr. Worobo joined Cornell University as an assistant professor in 1997, and was promoted to full-time professor in 2013. Professor Worobo has a long and distinguished track record conducting cutting edge research in food safety and food microbiology and applying research results toward developing technologies to improve food safety. His research has produced over 200 papers in leading peer-reviewed journals with over 7900 citations, and he has received numerous awards for his outstanding research accomplishments. Dr. Worobo is currently the Associate Director of the United States Agency for International Development (USAID) Food Safety Innovation Lab and a member of the National Advisory Committee on Microbiological Criteria for Foods (NACMCF).
