Advancing Dry Sanitation Forum

• Kerry's North American Headquarters • Beloit, Wisconsin

Designed for professional sanitarians, hygiene managers, food safety leaders, and hygienic design specialists in low-moisture food manufacturing, the forum brings industry leaders and subject matter experts to address emerging challenges, share best practices, and strengthen alignment across the industry. Over a day and a half, the program will explore practical strategies for sanitation validation and verification, hygienic design, allergen control, emerging sanitation technologies, and the future of dry sanitation.

Dr. Rocio Foncea of Neogen’s Application Scientists team will participate in Tuesday’s panel session, “Defining and Defending the Sanitation Break,” chaired by Cornell’s Dr. Abby Snyder. Neogen representatives will also be available at the exhibit table throughout the event.

Why Dry Sanitation Matters in Low-Moisture Food Manufacturing

Dry sanitation requires a deliberate approach to cleaning, sanitation verification, facility design, environmental monitoring and allergen control. Effective programs pair science-based validation with routine verification and corrective action so teams can confirm that procedures are working as intended and respons when results fall outside expectations.

In low-moisture food facilities, equipment configuration, hard-to-clean areas, production conditions, and allergen risks all shape how sanitation programs are designed and maintained. Neogen's environmental monitoring resources emphasize risk-based sampling, sanitation verification, and data review to help food manufacturers strengthen food safety programs over time.

Dry Sanitation Topics Attendees Will Explore

  • The hidden cost of water in dry facilities
  • Emerging sanitation technologies with real-world utility
  • Allergen control in dry environments
  • Hygienic design for low-moisture food facilities
  • Defining and defending the sanitation break
  • Leading the future of dry sanitation

Meet Neogen Panelist Dr. Rocio Foncea

Dr. Rocio Foncea is a Global Field Application Scientist at Neogen, where she leads global technical initiatives supporting innovative food safety solutions. She received a Ph.D. in Biochemistry and Molecular Biology from Universidad de Chile. With more than 20 years of experience in molecular biology, microbiology, and biotechnology, she has led cross-functional teams, supported global product commercialization, and developed scientific training programs for customers and industry professionals. Her expertise spans food safety diagnostics, environmental monitoring, assay development, technical leadership, and scientific collaboration across academia and industry

Practical Progress in Dry Sanitation and Food Safety

The forum gives professionals responsible for teams that manage food safety in low-moisture production a focused setting to compare approaches and learn from peers facing similar operational challenges. Sessions connect technical principles with real-world implementation, covering decisions such as, when and where water is introduced and how equipment design, allergen risks, verification methods, and emerging technologies can affect sanitation performance.

This collaborative emphasis is especially relevant as food manufacturers build dry sanitation programs that are both scientifically defensible and practical for production environments.

We look forward to discussing how sanitation verification, environmental monitoring, allergen control, and better use of food safety testing data can support stronger sanitation programs in low-moisture facilities.
