Veratox® for Coconut Allergen is intended for the full quantitative analysis or simple screening of coconut protein residues on surfaces, clean-inplace rinses and in food products such as beverages, cookies, crackers, chocolate bars, ice cream and cereals. The test provides food processors a method to easily determine if an ingredient or product has been subjected to cross-contact with coconut residue. Can also be used to screen environmental swabs.

Technology

The Veratox for Coconut Allergen test is a sandwich enzyme-linked immunosorbent assay (S-ELISA). Coconut protein is extracted from samples with a phosphate buffered salt solution (PBS) by shaking in a heated water bath and clarified by centrifugation or filtration. The extracted coconut protein is added to antibody-coated wells (capture antibody) where it binds to the antibody during an incubation. Next, a washing step is performed to remove unbound proteins, and then an enzyme- labeled antibody (detector antibody), is added to the microwells. The detector antibody binds coconut protein captured in the microwells. After a second washing step, the enzyme substrate is added. A blue color will develop when the coconut protein is present as a result of the bound detector antibody. Lastly, Red Stop reagent is added to stop the color development reaction. The optical density of color development is measured in a microwell reader. The coconut protein concentration for unknown samples is determined by plotting the samples’ optical densities against those generated from a standard curve.
